I am guessing it does but I can't see confirmation anywhere.

You can edit until they read it. Once they read it, you'll be denied from editing it so you know, and it's set in stone.

If you delete something they haven't read, it'll vanish and they won't get to read it. If you delete something from your sent items that the recipient has read already, then no, they can continue reading it and you're only organizing your sent list by cleaning stuff out (I guess -- that's the only reason I can think of).
