I prefer to cook them with a fork. Use a moderate pan, lift the egg from the outside to the centre. THe result is fluffier than just letting it sit in the pan. Also, I don't beat the mix, preferring to stir the broken yolk through so \ the finished product has waves of yellow and white.

Steak and Kidney.

Had the butcher prepare the mix for me. Equal parts steak and kidney, using a lean rump fillet and lamb kidney in place of beef.

Fry a finely chopped onion until just translucent. Put the meat into a bag with flour, salt and pepper, and massage the bag until the meat is coated. When the onion is ready, put the meat into the pan, and fry until the flour browns. SOme will stick to the bottom of the pan; this is a good thing. But do not let it burn.

Add enough water to cover the meat, then simmer for an hour or so. Add a splash of soy sauce and a couple of spoonfuls of tamarind paste as it cooks. Check the seasoning.

Serve with mashed spuds, steamed carrots and pees or beans.

The original dish contained oysters, as they were a cheap alternative. Just throw them in towards the end of the cooking. I sometimes add mushrooms with the water, just for a contrast of texture.

My choices were chicken, blueberries, lemon juic, parmessan cheese chilli-garlic sauce...

and eggs.


Now the sauce wasn't terrible. The parmessan added some debth to the blue. And it fit! I was eating alone...

The problem you see... I chose the chicken.

That was a nay-nay.

Next time it'll be blue eggs and whatever-else-is-in-the-fridge.

I would have gone for the lemon and blueberry cake...with the eggs. flour, sunflower oil, sugar, baking powder and a pinch of salt.

Might make a cake, feeling down, baking is like alchemy. It never ceases to amaze me

Ladies and gentlemen yesterday with friends .... goat!

(cabrito asado with oven fried rice, Portuguese)

Hind quarters or leg of a goat

4 garlic cloves

tbsp paprika

4 bay leaves

1 big carrot

15 or so small onions

20 or so small new potatoes

100 grams chorico

100 grams salcichao

100 grams bacon

3 cups of rice

7 cups water

Take the hind quarters of a goat season it wth salt and pepper and marinade in garlic, paprika, bay leaves and 500 ml. white wine. Leave overnight covered in the refrigerator.

Put goat in an oven proof tray, bard with slices of the bacon and add sliced carrots and 12 onions. Use kitchen paper to remove the excess marinade sticking to the goat. set aside rest of the marinade. Heat oven to 200 degrees celsius. Roast for 45 minutes.

Add new potatoes and roast for another 45 minutes, turn goat and baste with marinade frequently.

Oven fried rice:

Cook chorico, salpichao, bacon and 4 of the small onions in the 7 cups of water for 1 hour. Fire not too high or too much water will evaporate. You can also if you so choose add the head of the goat to the water and cook one hour.

Take out meats and slice the saussages and place the 3 cups of rice and the stock in a ceramic bowl. Roast in the oven for 45 minutes or until water has evaporated and rice is tender. Halfway through the roasting process add the saussages to the rice and have it roast together.

(best with kid I guess, but I used an old goat ... wink )

Heh. Us young folks tend to be lazy on the cooking side. Or we simply choose not to afford good cooking. (i'll do better in 2 months when my credit card looks alot closer to 0$)

I made rice too over the weekend. Alot of it. They didn't have a wild/brown rice ratio above 20%... So I bought it seperately to get about 40% ratio.


So, I had this 'general tao' sauce that I used on the ribs, and cooked the rice in that (so, basically rice cooked in a broth). As well, I added cream of mushroom soup (since I didn't want to spend more money on real mushrooms.), garlic , paprika, dill and salt.

I have like 6 quartz of rice.... Guess what I'll be eating all week?

Onions.

If you like toppings, like toasted onions, use green onions. Take those really fat ones, the stalks. Then, slice them, into rounds, like less than 1/4 inch. Then, moistened, put them in a bowl with cornstarch.

Toast them in hot oil until golden brown. It will only take a couple of minutes. Or it depends. You can also use shallots. Slice them into rounds thinly, then dredge in flour or cornstarch. You get toasted crunchy onions that you can use as a topping for noodles or soups. If you like, add a bit of salt to the flour.
